I love this thread... when my brother and I were a little younger, horror used to be all about the exploding heads for us :D
As it has already been said, Tom Savini has done some really awesome work.
Right now no specific exploding heads comes to mind though, except for the little girl in Lucio Fulci's "The Beyond". And if it counts as an exploding head, the "jesus wept" scene from Hellraiser II. I'll be back if I think of anything else :)
